Bhindi (Okra / Ladyfinger) is undoubtedly my favourite vegetable. I can eat it anyday ! Here is the easiest preperation of Bhindi with minimum ingredients.No gravy, no tomatoes. Simply dry Bhindi.
Here’s the recipe.
Take about 250 gms Bhindi. Wash it and cut it into medium sized pieces, like so.
In a kadhai or pan, heat about 1 tbs oil. Once heated, shallow fry the bhindi.
** Do not cover the Kadhai as this will help prevent stickiness of Bhindi**
(I had added 3-4 pieces of Kokum in it as I had run out of Amchur powder. You can skip Kokum and add Amchoor in the masalas instead.)
** Kokum can be replaced by Tamarind too.
Cook this for approx 5-6 mins till it gets some color.
Now remove the bhindi from the kadhai and keep it aside
In the same pan, heat about 1.5 tbs oil. Once heated, add 1tsp cumin seeds. Let it splutter.
Into the pan, add 1 medium sized onion finely chopped.
Cook this for next 5 mins, till the onion turns brown.
In the meanwhile, in a bowl, mix below spices-
1tsp Kashmiri Red Chili Powder, 1 tsp Coriander Powder, 1 pinch Asafoetida, 1tsp Cumin powder and salt. Mix it well.
Add this spice mix to the onion.
Mix it thoroughly and cook this for next 8-10 mins. Now into this add the Bhindi we had kept aside. Cook till for next 5-6 mins more.
Dry Bhindi is ready to be served
