This traditional #Maharashtrian Dish is a lot of people’s favourite. But the problem is you don’t have it available at most restaurants. Even authentic Maharashtrian restaurants only have it available on certain days such as Tuesdays or Fasting days.
Here is a recipe of making crunchy Sabudana Vada at home.
Soak about 1 cup Sago Pearls / Sabudana for 3 hrs.
Boil 2 medium sixed potatoes, mash completely.
In a mixing bowl, add Sabudana, Potatoes, Cumin Seeds 2tsp, roasted and crushed Ground Nut about 3-4 tbs, 2-3 green chilies finely chopped, a handful of coriander finely chopped an salt as per taste.
Mix all of this above. Grease your palms with some oil and with gentle pressure, knead it like dough.
Make medium sized balls.
In a deep frying pan, heat ample oil and now fry these Vadas in the oil till they are nice and golden brown.
Serve these with sweet curd and peanut chutney.
