Hakka Noodles and Fried Rice are without a doubt every Indian's favorite when it comes to #Desi Chinese. Here is a recipe for making a quick serving of Hakka Noodles
Here is the recipe.
Heat about 10 cups water in a deep pot. Add a little salt and oil. Bring it boil.
Now add the ready-made noodles (Ching’s or similar variant )Boil it for next 3-4 mins.
Check whether its cooked well. Ensure you don’t overcook it. Then drain it off and pour cold water over it so that it does not overcook.
In a frying pan, heat 2-3 tbs oil. Once heated, add 8-10 cloves of finely chopped garlic (ensure you chop this finely. This is very important). Saute it.
Now in this add 1.5 finely sliced onion & chopped Spring onion greens. Saute it well.
Now add Carrot – 1, Capsicum 1 , Cabbage ¼ , All of this finely shredded. Also add French beans about 7-8- finely chopped. Saute it well for next 3-4 mins. Don’t make it mushy. Nor you must overcook.
In this add 1 tsp Dark Soya Sauce, 1tsp Vinegar and suate it.
Now add the cooked noodles, salt and 1tsp pepper.
You can also add Ching's Masala at this point. Or while you saute vegetables.
Mix it well. Add Spring onion for garnishing.
